So I'm brand new at the fish thing...really keen to hear any hints/opinions about how to set up a 10G tank and what to stock it with?

Too many possibilities...can you narrow down to what fish you desire? If nothing else, visit an LFS and write down what interests you and make a post about them here, and of course research about them here and online. See what folks are saying about their requirements.

As for getting the tank ready...

heater....3-5 watts per gallon
good filter....one that has a rating for twice your tank size
a substrate of your choosing....play sand is inexpensive and allows plants
glass hood to minimize heat loss and to stop jumpers
a goold liqid test lit for cycling and future testing (ammonia/nitrite/nitrate)
thermometer....not the decal stick on type
declorinator...best bang for the buck is Prime
decorations of your choice

I have been rabidly researching all things fishy since I got the tank, it came with an Aqua One HOF which I cant find filter media for, what sort/brand is decent that i can cut to size? or is that unadvisable?

At the moment I like the idea of 4 Zebra Danios, 2 Leopard Danios (will they school together?), a few ghost shrimp/snails and later on 3+ pygmy Corydoras. would that be overstocking the tank much?

I think that would be about right, but where do you get the ghost shrimp from?
We don't get them up in Aucks, lucky you down in Wellington! :D

I think that the danio's would school together.

Remember to keep up with maintenance, water changes, gravel vacuums etc.

I have one of those aqua one HOBs and I find the filter media at the larger pet stores here in Australia like pet paradise. They usually have a section for equipment
