is there a list of large fish that could be kept in a 55g, where there would just be a single specimen, or maybe 1 or 2 big ones with a few smaller fish?

One limit you quickly run into with a 55 for a large fish is that it is only 13" wide. This means even a 10" fish is pretty cramped turning around. If you have room for it a 75 can fit a much longer fish.

You might be able to get away with an eel or similar shaped fish that is a pretty good length.

The type of fish and its flexibility will play a big roll as well. Eels and lungfish are very snakelike and can easily like in narrower tanks that their bodies are long.

It's not the gallons you're looking for, it's the width. For example, my friend had a 2" pacu that became an 11" pacu in a short time. He has it in a 150g but the thing is setup to be longer instead of wide. The pacu can barely turn and I've told him many times to get it out of there because it basically sits in one place.

There's a "mini monster" sticky over on MFK you could check out.

I have an African Leaf that's only 4", but is becoming quite a terror....just a thought.....

I have a 55g and it's really hard to keep anything too big in it because of how small the width on the tank is. Your probably be better off with a 40 breeder or just something larger then a 55g in width. I did keep a tiretrack eel in the 55g for about a year. But that thing grew like crazy so I had to give it away to the LFS after a while =/

A Dinosaur Bicher is a good "monster" for a 55 gallon.

like, it doesnt have to be like a massive fish, but i want something that can comfortably fit in a tank of that size that would be a fun tank. the reason for 55g is because this is the tank that i am working with. i wont mind a fish thats 7-8 inch, i just want something bigger than the typical small fry 2-3inch fish i have.

There are many cichlids that get to 7-8" but a "list" as such doesn't exist. One of the problems you run into is that sometimes a fish that will meet your desire will need more length than 48" or will need more mates than a 55 will allow for. Just take your time and research, research, research.
