75g canister/UGF help

On my last tank a 55g I used RUGF(2 powerheads) with a HOB method. This time around I was thinking of going the canister route. If I just use my HOB and a canister will this be ok or do I need something else? I also wanted to know if I will need to vacuum more than before since my gravel will sit directly on the glass instead of on a UGF. Another issue I have is how much gravel can I safely put in the tank? I am total rookie when it comes to canisters so If I'm missing something please tell me.

You can use just the HOB and canister, just a canister, just the HOB, or RFUG and canister, or....you get the point

The more current you have, the more solids will collect in the filter and less will collect in the gravel. You won't ever get it all to collect in the filters unless your gravel was actually stirring from the current so it's always a good idea to vacuum the gravel. You may get more gunk when you vacuum, but you shouldn't need to do it more.
