All-White Severum... Why?

Ok so a month ago i bought a Golden Severum from petco, it was all white and looked starved and stressed so i bought it to save it and get its color back...
Well a month later (present) it is still all white. I was just wondering if anyone had any ideas why..

Food: hikari micro wafer/pellet mix bloodworms spirulina/krill pellets
water parameters are all good 0,0,10 (am,rite,rate)
the eye is black so its not albino

I just find it difficult to digest a broad stroke statement.

Albinos can exist and do exist. even in nature in animals not typically seen as albinos.

in aquaria many breeds are selectively bred to enhance albinos.

the likelihood of an albino Severum is not far fetched.
