Any schooling fish work good with JD?

Ok, so he has lots of friends in his level which is good. You may have hit the nail on the head, with him being there for just a week - he's still getting used to his tank environment and the outside goings on from his tank. It usually takes a couple of weeks for them to totally settle in.

My female Firemouth is still in hiding after a week, even with the new dither fish I put in yesterday - they have drawn out the male more though.

So long as he's feeding occasionally, he'll be fine. Give it another week and I reckon he'll be far better settled in. Perhaps then introduce dither fish if you're holding off for a bit.
