Can anyone tell me if the Apistos available now days still need super soft acidic water, natural water? I'd love to get some but don't want to mess up beautiful fish.

Water ph doesn't matter nearly as much as ph swings do. I've kept gbrs in 8.0 tap and right now I have some apistogramma cacutoides fry in the same ph water and they are perfectly happy. Keep in mind though that gbrs are pretty finnicky.

I believe your success has to do more with the source for your stock.

As per stated, on the stock +1
Depends what kind of apistos you are getting, if you are getting tank bred, than you shouldn't have a problem, as per wild a little more tricky.
There are a couple good reads on www.apistogramma.com
