I don't have softwater and have fry constantly in all of my breeding tanks.
As far as what to start with, I really think cacatuoides are the "easiest" and most outgoing apistogrammas. A pair does fine in a 10g tank especially of domestics (orange, double red or triple red). The females are quite striking when in breeding colors.
Its pretty likely unless you pull the fry or parents your fry survival rate will be low but you would still get to watch them parent which I find fascinating.
