aquatic plants from seed?

I am interested in starting a walstad tank, and have been wondering about growing the ground cover from seed.

are there any good aquatic plants that can be started from seed?

a lot of people get bulbs from walmart.

I'm sure cultivation would be harder from seed, but I am still curious. bulbs are out of the question, I don't want water onion, I'm looking for ground cover, like short grasses, glosso, etc... it seems like you could get more even coverage, with consistant height across the tank if you seeded the tank before even adding water.
