Attaching 2 Pieces of Driftwood to Eachother?

If it were me I would use a stainless steel screw. No curing and no chemicals and instant.
 
Some type of glue is really the only option. A screw at the connection points would end up breaking the pieces (it's really an awkward connection). I read about someone using an epoxy that was rated safe for drinking water, so I'm going to see if I can find some of that.
 
I've always used zip ties. Never had a problem.
 
Super glue will eventually soften and lose its bond underwater. You might try some of that epoxy that is used for fragging corals.

I'm testing out some of that puddy stuff, which says it's inert after it cures. I'll report back how it works.
