I have a 6 gallon tank with a couple of mystery snails in it. I left the egg caches (2) that they left and it looks like they both will hatch. Obviously I will be quickly overrun with snails. What are recommendations for when and how I remove these snails from my tank? My thought was to give them to other people and to trade some back to my lfs.

You can do that, or remove the clutches before they hatch and freeze them. Before you hatch them, I would check with the LFS to see if they would be able to take them, often they have distributors and will not take from local breeders. Also, they commonly only want subadult to adult sizes, not grow-out sizes. It takes a couple months for the apple snails to reach saleable sizes so unless you have the room to grow them out, you may consider not letting them hatch. You may be able to rehome some to hobbyists in your own state, but they cannot be shipped without usda/aphis permits. Hope this helps, good luck!
