Yamato numaebi does not mean Japanese shrimp. It means something more along the lines of "shrimp of the yamato river."

nihonjin is japanese people
yamato is the old way to say the country japan.
nihon and nippon is the country, Japan.

ever heard of "yamato damashii?" it means japanese spirit = japanese pride.
