Will different colored Gouramis breed? Like a gold with a platinum? Or a blue with a gold? Just curious... :)

Only those of similar species will breed. Bear in mind Trichogaster trichopterus has at least 4 strains that exist: gold, three-spot, opaline and four-spot. As far as dwarf gouramis are concerned, you'll hardly be able to find females nowadays so this isn't much of a big deal.

Wild stock dwarfs are available from a few different sources at the moment, so it may be interesting to try and breed a nice aquarium strain male with a wild female and see what happens.

what about giant gourami's.Has anybody ever heard about breeding them ??????I have a mature male 27",and would like to know if it could be done.

Would be interesting, but it might be hard finding another female that size or close enough. I think your best bet is asking around MFK.com.
