I have 3 of them, one which keeps the other 2 hiding out ALL the time....
Feeding time he chases the others, anytime they come out basically.
Had them for about 4 weeks, and planning on adding a couple more fish soon.
Should I wait tio see when I add fish if the Bully changes his ways, or try and give him back. I cant enjoy my tank b/c of him, honestly???
Please advise....

Gouramis are aggressive and territorial. It's not at all uncommon for them to fight amongst one another. I would actually advise you to return two of them and keep one. Unless these are dwarf gouramis, they are going to get rather large for that tank.
 
What is your male/female distribution. If you have more than 1 male (back of the dorsal fin is pointed vs. rounded in a female), that may be the cause of your problems.

For 3, having 0 or 1 males and the rest females is your best bet, but even then you may have problems. I have found that blue/gold gouramies are the most aggressive among the 5 or 6 species I have kept.

I bought 2 dwarf neon blue gourami (males), one was such an ******* that he picked on the other one and poked the other ones' eye out! The other one on the other hand is the most mello fish I have seen. He is my pal since I nursed him back to health after loosing his eye.

I would suggest keeping a real close eye on the aggressive one or replace the others as suggested because in just a matter of minutes or hours he might injure the other ones in a heart beat!

Just about anything you can think of, actually. A single gourami usually does fine in a community tank. You'll want to avoid any other anabantids (bettas, paradise fish etc.) but really, a nice school of harlequinn rasboras would look nice in there, maybe some livebearers if your into husbandry and fry rearing, corydoras catfish make neat little bottom dwellers...
