Southern Cornmeal-Crusted Catfish Recipe

4 (4 to 6-ounce) U.S. farm-raised catfish fillets
1/4 cup buttermilk or plain, nonfat yogurt
1/2 teaspoon hot sauce
1/2 cup cornmeal
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper

Stir together buttermilk or yogurt and hot sauce; brush on catfish and allow to marinate for 10 minutes. Coat catfish lightly with cornmeal and sprinkle with salt and pepper, to taste.
Melt butter and olive oil in a nonstick skillet over medium high heat. When skillet is hot, saute catfish about 3 minutes on each side, turning only once, until golden and crisp. Serve immediately, garnished with lemon wedges and with tartar sauce as accompaniment.

I have a 240 with this guy. I have three cascade 1500 filters and two 36 watt uv's. I still have to change the water once a week due to my rtc's feeding. He gets salmon fillets, talapia fillets, silversides, smelt and once in a while a 5-7" pacu.

There's no way I'm releasing him into a pond and messing up a eco system.

Are you in the US? I believe that they are native in many of the rivers / lakes / ponds in the US.

Many may disagree with me, but if there is alrady a local population, what harm is there.

It's like when I released several of my Red Ear Slider Turtles back into the river where I caught them a few years before.

If you don't plan on putting it in a pond................see above.

(as long as it wasn't treated with any nasties for disease)

Good thing you have a bare-bottom tank. What a mess otherwise.
