Cherry Red Shrimp Tankmates

Can anyone list possible tankmates for cherry red shrimp? They will be in a planted 72g bowfront with two canister filters. I want to have around 100 shrimp. The ideas I have now are:

guppies
rummynoses
boesami rainbows(sp?)- I'm thinking that these may try to eat the shrimp. Anyone ever keep them together? I just need a centerpiece that can live with shrimp.
Serpae Tetra- too worried about their nipping w/ the guppies, so I'd take the guppies out if I got these. Would they be ideal if I got a school of 8? Or would they bother the rummys and other tetras?
Congo Tetra- another centerpiece idea

Right now, I have discus in my tank, but I want to switch it to be a community tank with plenty of color. This was possible with the discus, but I can't keep shrimp, hence the change.

I think the rainbows would definately try to munch the shrimp. How densely planted is the tank? Is it mainly stem plants or are there areas with mosses and deep cover?
I keep cherry shrimp in a 36g corner tank with cardinal tetras, cherry barbs, sterbai cory and honey gourami and they are thriving. I rarely see juvenile shrimp, but the population has steadily grown. The shrimp mainly hang out in the moss and the hornwort in the tank where they have some cover. Not sure on the congos, i have not kept them yet.
 
It will "medium" planted, for lack of a better word. lol And yes, I'm parting with the discus. Beautiful fish, but they are very needy. Also, I would like to keep a huge group of guppies(my dad use to keep them when I was young). Eventually I'll go back to discus, but for now I'm focusing on CRS with tankmates.

I want to be able to see the CRS everyday and therefore need to eliminate any death threats. lol I guess the rainbows are out! Keep the suggestions coming.

Yes, will adult CRS come out of hiding during the day if there are guppies with them? I am also considering keeping CRS, but currently have guppies. I'm growing a java moss wall, so maybe the babies can hide in there? Do you have to feed them at night or something?
 
First off, I think it's crazy cool to replace Discus with shrimp! :grinyes:

I'd forego the Serpaes and Rainbows. Rummies and Cories should be fine. The centerpiece fish will no doubt feed on any baby shrimp that venture out, but like Jinx said a Honey Gourami or (My persinal fav) Festivum cichlid shoud leave the adults alone provided they have cover.
 
Lol, the more I think about it getting rid of my discus to do this seems crazy. But I think I still want to do it.

The problem with gourami's is that they are bottom dwellers(for the most part). I need fish for the top and mid levels. The rummies and shrimp will be enough activity for the bottom.
 
Maybe a school of Mathae or Marbled Hatchets... they'd stay on the top and remain pretty small.
 
After thinking about it, I think I may have to keep the discus. This is because I just can't have a centerpiece fish with shrimp as nearly all of them will try to snack on them.
