I had 10 cherry shrimp in one tank with black sand, and another 10 cherry shrimp in a tank with white sand. after several days, the shrimp in the black sand tank looked much redder than the ones in white sand.
The only other differences between the tanks was that the black sand one had MTSs

Yes, the dark background makes the red stand out more. If you put the shrimp in the tank with the white sand you'll find it's color looks the same as the shrimp in that tank.

I would think with all else being equal, the black is causing the better contrast.

the same with everything different colours bring out more colour and attractions

actually, i moved all of the shrimp over to the white sand tank and that's when i made my observation. i'm a little bit wiser than being a fool of optical illusions.

Fish and inverts will slightly change their colors to match their surroundings. It's not just that they appear darker on darker sand. For example, I have some cories who have a very pale off-white base color on light sand, but on dark color substrate, over several days they turn their base color to tan.
