Just posting to get a sanity check. Every so often as my corydoras forage on the bottom they sometimes seem to dig extra deep in the gravel. Are they trying to relieve some irritation or is there just something really tasty/interesting buried in the substrate?

they'll do that a lot. They kinda sift through the upper layer of the substrate with their little barbels. Normal cory behavior.
So long as they're not activelly rubbing their bodies against the gravel or anything then don't worry about this. It's a cory's thing to rumage through the gravel.
mine always do that its pretty normal mostly for my peppered cory, but my albino does it sometimes!
As long as they are not damaging themselves, they should be okay.
My bandits seem to be doing this lately ever since I put in a much finer gravel over the older course gravel I initially put in the tank.

My guys look OK. I am usually most concerned with the state of their barbels, however, they look like they are in pretty good shape. So, for now it looks like they are just doing their thing in what sometimes seems to be the least logical way possible. Corydoras really are amusing fish.
