one of my crypts has three babies growing off it. one is about an inch tall, the others are just sprouts. at what size could i safely sepperate them?

Let them establish themselves and they will then be able to be self sustaining. I would say they reach that point when they have 3 or 4 so leaves on them.
Crypts don't like to be moved so if there is no pressing need, I would just let them spread.

i've moved mine all over the place and never had a problem. they've never lost leaves or anything.
