If you don't have a large investment in Yeast and sugar, I would say to cut out the DIY system and use the Excel.
Your pH was jumping all over the place, which could be harmful for the fish and Excel is much easier to regulate and will get the same result.
I always feel that for a little tank like yours, Excel is a better option for safety reasons.
If you want to continue with the DIY, go with 1/2 of the ingredients you used previously, perhaps a smaller bottle(one liter) and keep an eye on the resulting pH.
