sometimes it's constantly open and shut... sometimes it's not.
what you should pay the most attention to is the gills.. if the fills are going crazy, flaring way out and back in very quickly then you may have a problem (especially if they're reddened and inflamed)
i have a peacock eel that goes absolutely nuts when he gets live food. he tears into it like a rabid dog, and his gills start pumping very hard.. but it goes away after he's calmed down. if this were happening all the time, i'd be concerned.. but its just when he's excited.
