I have an overstocked 12gallon tank, but I am out of town and can't keep up maintenance for a few days. Is doing daily water changes the only way to keep the ammonia levels down to a decent level for a few days until I can get home and reduce the fish load? My girlfriend is there and can do that much.

Charcoal removes/neutralizes ammonia as well.

Just have her dose it with Prime daily. It will detoxify the ammonia and change it from NH4 to NH3 or vice versa. I forget which one is toxic and which one isn't.

i nkow there ammo lock, which if i remember correctly is a liquid that works to change it from NH3 to NH4

i'd recomend getting ammorocks or ammocarb, forget which one is which, but it is pretty much carbon and ammo chips that you could jsut put and leave in your filter media while your away. you could evne leave it in there so while your home so you wouldnt have to do as many WCs.
