Fast rise yeast or regular yeast for CO2?

Will wine yeast create a foam or will it be the same as the bakers yeast?
 
Only foamy when added it in. But it settles down and no foam when it's working.

How many inches of foam in a 2 liter bottle?

When I was doing homebrew CO2, I discovered that slower CO2 production was more desirable than the reverse. I never tried brewing yeast cultures but that is an excellent idea as they will tolerate higher alcohol levels than others. Yeast will start faster with warmer water than with cold water...up to a point where the water temp is too hot and kills the yeast organisms.
