The two net approach for me too. Using one to direct him into the other... hopefully close enough to the surface where lifting the net from underneath eliminates all those escape routes.
 
i have learned to just take it very slow. when i rush the net at them, they usually out maneuver me, but when i move slowly and calmly, so do they
 
Take out most big plants.
Get a big net and hover the bottom.
Bring the net up when they are on top.

Or go real slow and allow the fish to go in. ( works for me I got animal magnetism) :)
 
Ever try the 2 liter soda bottle trap? IME It works extremely well at catching every single fish in the tank EXCEPT what you are after, ha ha. Maybe that's just my luck and yours might be different.

Take a 2 liter soda bottle, cut off the top 3 inches just past where the curve starts, then invert that piece back into the bottle. Put some food inside and gently submerge it in the tank. I use a binder clip to hold the inverted top in place so it doesn't float away when submerging it. Fish swim in through that little hole, but find it very difficult to get back out. Don't leave it in the tank for more than a one or two hours at a time tho since there isn't any water circulation inside the bottle and uneaten bait inside will start to decay. Sometimes it works great, and its worth a try.
 
Use a black net instead of blue, green or whatever other colors you may have. Fish learn to trust a black net a lot easier than other colors, and if you are patient enough they will eventually try to explore the new "cave."

It's not easy, but at least you're not catching loaches in a tank loaded with caves.
