Fish then Plants now invertes

So for the last 3 decades I've kept fish off and on. Now I'm back at it and on a tight budget. I want to try shrimp now, so I've researched and researched (Same thing I do with all my fish and plants) feel I can try it.

I have a 5 gallon eclipse that is cycled and full of plant clippings from my main tanks. I let the clippings grow out and sell them to the local pet shop. It pays for my Black ghost and Angels frozen bloodworm habit.

I think I should start with ghost shrimp but would love some cherries or bee shrimp.

So what would you recommend and how many can I put in the 5 gallon hex to start a colony.
 
Seems odd that I can get and sell ghost shrimp cheaply for feeders, yet cherries are expensive. I had it in mind to sell them for more equipment and food.
Thank you for your input I guess I could sell cherries in the local cities or online. But I think I'm getting ahead of myself.
