Florida themed tank?

Sunfish in general are aggressive with one another, especially males, especially when there are females present. Think of them like CA/SA cichlids and you'll be on the right track. They certainly can be kept together, but you have to be careful that each fish has his own space and will not be hounded to death by the others. Enneacanthus sunfish are less aggressive than some others, but you still must take care when stocking.

I'm not sure I have enough experience with these fish to answer your questions adequately. Try searching for 'Enneacanthus' on http://forum.nanfa.org/ for more and better info. Several members there are very experienced in keeping Enneacanthus.

I was thinking about this and realized with all the invasive species of fish I could call my tank a Florida themed tank but you guys are all talking about Native Florida species!

If you're going to be doing some of the smaller fish and shrimp or other inverts are an option... perhaps the P. Alleni? (blue crayfish). They're native to florida as well and have quite the personality. With a tank that size, you could easily fit a few of them as long as lots of hiding places were provided. Crayfish are a natural food source for many sunfish but depending on the sizes its possible to encorporate them and if they were to successfully breed, the fish would get a little treat in the form of juvenile crayfish every now and then. I had a tiny bluegill and large mouth bass in my tank years ago for a short period of time until they got larger and I released them back. (before anyone scolds me on the dangers of releasing animals back in the wild, I was in high school and didnt know any better). I like the idea of the natural tank, hope all goes well!
