?

I mean, I look at my small 5 gallon with some amazon swords in the background and a crypt in the foreground, and they appear to be doing fine for the last 8 months. A lot of growth, no co2 injection, no fertilizers or special substrate.

What does Flourish do exactly and how might it help my plants?

Someone school me on this, please.

okay seachem has a line of plant products which they call flourish. That flourish line then has a whole bunch of products that go under the name: Flourish Excell, Flourish Trace, Flourish iron and so on. Flourish excel provides an alternative carbon source for the plants as opposed to yeast/pressurized gas method. The rest of the flourish line provides necessary micro and macro elements for the plants as a food source. So they can grow lush, colorful and healthy overall

So the plants that I have now that have no added firts/co2/carbon etc. that look good, can look better?

SOLD.

How would I determine what my plants can benefit the most from? There appear to be a ton of different bottles that Seachem produce..

Flourish Excel is a carbon supplement. Plants require a range of nutrients, starting with carbon. When you hear about people using CO2, this is their carbon supplement. Some plants require little nutrient additions, but if you give a proper balance of nutrients, plant growth should take off. Also, it will keep algae at bay.

Given proper nutrients, you should see plants take up nutrients faster than algae. Look up estimative index dosing for dosing schedules.

If your plants are doing OK and you don't have algae issues why not leave well enough alone? If it aint broke don't fix it.

Depending on your lighting, if its 2wpg+ then i would go with co2 and some of their ferts, if you dont want to get 2 into it and just want to give the plants trace then get a bottle of Regular Flourish. Though I would maybe switch up the plants for something else. With co2 + ferts the amazon sword will simply outgrow your tank in no time. Stick to some of the smaller swords and crypts.

I had algae issues until I got my SAE.

As far as leaving well enough alone, I tend to do just that, however - if somehow I am mistreating my plants by not providing the right amount of nutrients, I'd like to know what I could do about it.

Florish Excel is a great product for planted tanks and offers an alternative to the traditional co2 injection that a lot of people use. However, do take note that Florish Excel will or often does melt some crypts and vals. All other plants seem unaffected and will do well with the Excel.
