My new pair of false clowns will be introduced into a tank, a newly cycled tank, next weekend, and in the mean time, i want to buy some types of fish to chop up and get frozen in readyness...

I was looking over the fish monger counter and besides all the normal fish you get there, i was looking at 1) Squid 2) Clams and 3) Raw Prawns...Mixting in a little nori aswell to give it some variety..

Can anybody see any issues with these foods?

None, at all variety is the spice of life. Use the whole fish and clam; puree in a blender and freeze in ice cube trays. Just, cut off an appropriate sized piece when you are ready to feed.

It depends on what I'm feeding to be honest. If it's smaller fish I cut the cube into quarters and drop some in . I think that the time release give every one a better change to get a good feed. If it's larger fish triggers, larger wrasses, Lions etc. I thaw then feed as they just suck the food down.

I'd also feed them rather sparingly. Not any more than they can eat in 1 min or so every other day for most species. As an alternant you can give a small amount of food in the moring and a little in the evening just depends on what you have the time for and the fish species in question.
