Came back from 4 days of vacation and my baby snails and snail eggs seem to have disappeared. I recently added ghost shrimps and guppies... do they eat snails?

did you have anyone coming by to feed the fish while you were gone....? Snails normally show in the tank as a hitchhiker but thrive from over feeding and the like.... If the tank didn't get fed as normal, the snails would have simply "went away"...

Trumpet snails, MTS, do not deposit eggs, they are livebearers. Go in in during the dark and shine a flashlight on the tank before you say those are gone.

I have suspected Ghost shrimp of eating either eggs or baby snails before.

I've seen my ghost shrimp prying freshly hatched pond snails off the glass and eating them. Also seen them working on larger shells, but don't know if they killed them, or if they were already dead. They don't seem to bother the ramshorns as much. My tank used to have a lot of pond snails and only a few ramshorns, after adding the shrimp, the ponds are dwindling, and the ramshorns taking over. 4 days seems pretty quick to wipe out a population though.
