Crayfish vary considerably by species. generally where you find them the water is actually pretty clean.
here in the PMW we have the Pacifastacus leniusculus a fairly large cool water species. these can get about 8" from rostrum to telson(basically head to tail) they are meat eaters.
I catch them diving (SCUBA) I use bait the day before Usually a cn of fish flavor catfood. I have cught many that were over 7" from heat to tail. these won't fit into the std crayfish trap..
after I learn how big they get I started using shrimp pots.
