How do fish sleep?

They don't.

Or at least not the way we think of it.

Most (all?) go into a sort of switched off mode where they just kind of hang in the water or rest in a little spot they've worked out. They become inactive, but they don't really suspend their awareness to the extent that we do. They rest but they don't "sleep".
 
Well, whenever I turn off the lights for the night, my oscars go to the bottom and lay there as if they are dying. They do this everynight, and they would get back up when they see you. My Pacu doesnt do this nor my blood parrot.
 
Actually, the red light thing is with everything. You see it, but it doen't aggrevate your night vision. Anybody in the military who is infantry knows this. You are required to have a red lens in your flash light. 2 reasons. First, the actual light doesn't travel as far as other colors, secondly, the red is non-irritating, that is you can turn off the light, and still be able to see in the dark. Try it sometime at night. I'm not lying! :D

So, to answer your question, yes, they do see it(I don't belive that fish are color blind, otherwise, why all the colors?), no it doesn't bother them.
