how much crushed coral do i need?

If you do regular maintenace and weekly water changes , you wont have a problem with ph crashes.

ok so if my tank water stays at a pH level of 7 because of the driftwood, should i change the water i use for water changes to 7? or is it ok to keep useing 7.5pH water for changes?

There is nothing wrong with water that has a pH of 7 and a KH of 2 degrees. You just don't have much of a buffer... a margin of error... should something happen that could cause pH to drop. A fish dying while you're on vacation, a filter conking out that you don't notice... these things can cause bioacidification to burn up a small buffer (e.g., KH less than 3 degrees), which can lead to a pH crash.

If your tank is lightly stocked and you're confident that the driftwood is leeching tannins as much as it is going to, don't worry. If you find KH dropping, if you have a moderately to heavily stocked tank, then you might want to consider taking measures to buttress your buffering (e.g., crushed coral in the filter).

Good luck,
Jim
