I am about to quit the hobby

Im really upset because I dont know what the solution to the problem is. The only thing that I also do pretty regular water changes as well.
 
Well in any event....I picked up an established 30 gallon tank today and set it up on my kitchen counter. I also picked up some HOME BRED Cardinals......only for $6 each.

I have them introduced with ultra clean water and will see what happens.
 
Water parms are usually the culprit as Sulawesi's need to be in higher temps and higher pH than our regular dwarf species.

If it is well-planted it is possible to have 0 nitrate. Both of my heavily planted tanks are at 0,0,0,. Been that way for a couple of years.

Everytime I have a fish/invert disappear I just blame it on Scotty and the Starship Enterprise!
 
At night, when the lights are off, check if you have any little critters crawling on your glass.

If you see Hydra or Planaria, they are the sure signs that your critters are being eaten alive.
 
Honestly, not seeing the bodies doesn't convince me that something is eating them.

Agreed. If your tank is as well planted as you say, it would be very hard to see any bodies.

Are you sure there's no heavy metal that went into your tank? Any medications or anything of that sort?

What filtration do you have running? Have you tried any chemical filtration recently?

What fertilizers are you using and in what quantity and how often are you applying? You may be feeding your plants but poisoning your shrimp. I don't know enough about fertilizers and shrimp to comment based on your answer but hopefully someone who does will.
