When I noticed that my fish had ick a while back, it just looked sick at first. It would stay in a corner. Then I noticed that it had white specs on it. Almost like someone had poured salt on it. It looked yucky. But I did the salt treatment that I found on here and put the temp of the tank at about 82 and it was gone it 3 days.
 
the symptoms of a cichlid are like most other fish. white spots, acting lethargic.

the only real exceptions are loaches and some other catfish. loaches tend to have very small scales, and some catfish have none at all. this can make it difficult to spot symptoms.

Something that I found effective is a product called MelaFix (I think I spelled that correctly?) I have found that it is really effective against most external parasites and fungal infections, use as directed followed by a few water changes and it will almost always clear them up completely. I had an oscar and the poor lil guy had the worst case of Ich that I had ever seen. I used the Melafix and with 2 water changes afterwards he looked as healthy as the day I bought him!
 
You should be able to spot ick before physical symptoms start. It starts with one or two spots that quickly progress.
It is very easy to see if you regularly inspect your fish. You will see what resembles a grain of salt stuck to fins, scales, or their eyes.
