I was thinking shrimp and snails but I dont know what types! Does anyone have any ideas? I want quite a few in there. Also, what types of snails might be interesting?

if you want shrimp, I believe the best/easier ones to start with are Red Cherries (RCS) and Amanos. The RCS will breed readily in freshwater, although the amanos can't. They also can't breed together. Don't mix different neocaridina species, btw. They will interbreed, and you'll end up with hybrid shrimp with none of the color that attracted you in the first place. Useful site for shrimp species and care info: planetinvertz.com.

It depends. If you want fish that breed, then get Red Cherry Shrimp. Amano Shrimp eat algae and wont breed if thats what u want.
