I currently have a Betta in my 10g tank with 5 RCS (Which is how many I ordered, and received). I also had a Gourami in there. No casualties.

I feed mine shrimp pellets.
guppies and most other fish will pick off the baby shrimp.
while you may not see many adults get eaten the babies are a different story.
of the hundreds of eggs set free by the shrimp relatively few actually make it to adult.
that can change in a shrimp only tank and increase the survival but in a community tank you will probably see a drastic drop in comparison.

drat! here i was going to get some corys. I guess i will get another 3 Otos.
small school of hatchet maybe nice in my tank but i have duckweeds.... and my shrimp love to walk upside down on them and i don't want them to lose that space

The only guaranteed fish are otos. All other fish can eat baby shrimp. However, if you aren't in it strictly for breeding purposes, then there are lot of nanofish that you can add. However these shrimp do best in species tanks.
I keep my cherry shrimp in a tank with BN and red lizard pleco's, no worries from either species of fish there.

As long as you have ample cover - like tons of java moss, the shrimp will thrive. Very few fish would pass up an opportunity to snack on shrimp (baby or adult). But, with a place for them to go that fish cannot follow will lend a hand.
