I've had jellybean parrots before and never saw dyed ones at all. This may have something to do with Law of Supply and Demand.

Probably. People see colorful fish so they want to buy them. If it helps make more money why shouldn't suppliers dye them? (well other than the obvious reason that it is wrong...)
