I wouldn't worry about the light color on new leaves. My Coffeefolia leaves all start very pale or yellow and green up with age.

The coffeefolia on the wood has no substrate does it? I cannot grow it that way without severe stunting until finally has roots long enough to reach the substrate, then it resumes normal growth.
The coffeefolia with yellow leaves looks like it is the oldest leaves yellowing - if that is the case, it can just be age and dying off.
The lighter leaves on the barteri are not full-blown yet, as Len said, not to worry.
