Does anyone have any good recipes for meats with marsala? I tried some veal marsala someplace that was great, but I didn't get the recipe. I tried a recipe from the internet but it was just so-so. It may be my fault for using "sweet" marsala instead of "dry", but I couldn't find the dry version anywhere.

I know there are recipes for chicken and beef. I'd like to try both (though it will most likely be applied to venison, chicken, and rabbit). Whatever you have, lemme know!

I'd also like a recipe for a really good beef pot pie, the kind with two crusts.

Well, I don't use a recipe, but I saute' mushrooms of any sort or assortment in butter/olive oil, s&p, maybe a little shallot or onion and/or garlic. Depending on how much sauce I want, I may use some chicken broth. If I want alot of sauce I use some broth, reduce it some, then add Marsala. Now, depending on how well I like the taste will determine whether I add some Basalmic vinegar or not. If I need to concentrate the flavors I reduce, or if necessary I dilute with the broth. If I need to, I'll add some flour and water paste to thicken things up. If you have great tasting Marsala, that is most of the sauce, but sometimes the other flavors are nice as well. Sorry, bakers stick to recipes, but I am a cook and I have yet to find one way to make a great Marsala sauce. Marsala is a sweet wine, and I am not a sweet sauce person, which is probably why I play with the recipes so much. Good luck!
 
i use sherry instead of marsala.
 
Garbage in, garbage out. The sauce will only be as good as your Marsala.
