When I moved my tank (and it was only a 60 plexi) I moved the fish to a bucket and lowered the water to about an inch. I moved the tank with the stand and then slid the tank off to the new stand. I have a piece of plywood under my tank so that made it easier.
Now if I were moving the tank any other way or a larger tank I would bucket the fish and the rocks and keep the rocks under water. Move the emply tank and rebuild the setup. The bacteria in the gravel will not suffer for the short amount of time it will take to do the move. I would not even worry about putting a fish in with the gravel, it is probably more dangerous for your fish.
