and NO, they do not need a rock structure to get above the water. If you do provide them with one, they won't use it anyways.

*sniffle* awesome job! i had one.. he decided that the airline tubing was an awesome way out... climbed up it, and the blasted thing got out and died in front of my dresser.
my crawdad was more adventerous... got out of his tank, went over powerbar, behind 18, OFF the edge of my desk, along the wall behind my bed bunk bed, turned left, fought evil boxes and dust bunnies, and died next to a toychest. took me quite a few months to find it. glad it didnt smell.
