Andrew,

You'll have to look for another plant preference. Water lettuce (Pistia stratiotes) is illegal in Florida.

Alabama:
water-lettuce Class C noxious weed

California:
water lettuce
B list (noxious weeds)

Connecticut:
water lettuce
Potentially invasive, banned

Florida:
water lettuce
Prohibited aquatic plant, Class 2

South Carolina:
water lettuce Invasive aquatic plantwater lettuce Plant pest

Texas:
water lettuce Noxious plant

I believe so, yes. I'm not aware of any water lettuce that isn't the Pistia stratiotes species. And your LFS may or may not be aware of the ban.

Here's more info about the plant (see link below). On this page, too, it warns...

WARNING
Waterlettuce is on the Florida Department of Environmental Protection's list of Prohibited Species, and as such it is unlawful to possess or transport this plant in Florida.

I could rustle up a package of duckweed and giant duckweed next week.. it does have water lettuce with it so I will have to pluck them out.
