hmm.. Everything I've read says that if in pairs gouramis will swim together. If I get a male/female pairing will they still fight?

It will depend if you can find a female dwarf gourami, I heard they're hard to find.

I guess I'll just stick with the 1 gourami. Anyone know of any similar fish that would do well with the species I had listed (penguin tetra, topsail platies, kuhli loaches)?

Add 6 corydoras and 2 more kuhlis. Shouldn't be a problem.
