I am the same way with some of my fish. I try to count the silver hatchets, bleeding heart tetras, royal farlowellas, and SAE's every time I look at the tank. I also take a general count of the neons. I stopped trying to find the 6 clown loaches, 9 kubotai loaches, and any of the plecos because they are always hiding somewhere and it takes forever. I saw 6 of the kubotai loaches and 3 clown loaches feeding right by the automatic feeder the other night, and that was a great sight.
As far as snails are concerned, I have 25 in a heavily planted 55 gallon tank. If I tried to inventory them and the fish every night, I would never sleep. When I got my first 12 snails, I used to count them all the time and the plants were pretty small back then, and that took a while. Now, forget about it.
