Well, my ghost shrimp can't do diddly-squat out of the water. They are soaked and stick to the tile floor. They are impossible to see, since they are clear, impossible to pick up, because they are small, and thus, every week I find maybe 2-3 pinkish shrimp bodies al curled up ready for cocktail sauce! 
Amanos can run like crazy out of the water. When I bought my last batch one of them jumped out of the little acrylic carrying box and skittered across the floor. Another ended up in the bucket where they keep the nets. Both were absolutely fine.
