Do you think a pair of oscars would be fine in a 110gal tank?
I was thinking an albino and a tiger orange.
Also, could I put any other types of fish in with them, like a good sized catfish or something.

You should be ok with 2 oscars in a 110g and you can have other fishes in there as long as they're bigger than the oscar's mouth. Oscars aren't very aggressive, they're just voracious eaters hence the bad name. My parents had a tank with with 3 young adult oscars (about 8" long) with a school of black skirt tetras in there with them. The tetras ranged from small to full grown and I was amazed to see even the small ones were untouched. Now I wouldn't recommend anyone risk fishes like this, just wanted to point out that oscars aren't nearly as bad as some of the african cichlids.

the tank footprint is 48" by 18" on the inside and is 30" high.

actually, with those dimentions, i would only put one oscar. they need horizontal space to swim, and 110g. are too tall for two oscars. fish dont swim vertically. you could have one oscar and a few other smaller fish.

now, if you were to find one that was longer and not as high, then you could fit two, but nothing else.

or you can go to like a 125 and get 2 oscars and a couple other fish (not a large catfish though) the 125 has a better footprint for oscars.

A pair of oscars in a 110gal should be ok. I have had that same set up before and had no problems though I didn't keep them long. So can't say if that set up will be ok after 3 yrs.

Personally, I would go up 10gallons and get a 120g. MUCH bigger footprint of 48x24x24.

I'm sure 24" deep would make any Oscar happy. Lots of room to turn. It's 6" shorter though, but Oscars are mid-dwellers, right?

Just my two cents and that's the next tank I'm buying. Gotta have a good footprint and that includes depth IMHO.
