Partially cycled tank

I have been cycling a 40 gallon tank for an RES for a week. I seeded it with gravel and sponges that were matured elsewhere. The tank is decently well cycled. Ammonia drops by about 2-3ppm per 24 hours, and nitrates have appeared although nitrite production is overwhelming the pace as which is can be removed. The RES needs to go into the tank by the end of the week. The only other option is to keep him in a ten gallon tank or less with no filtration (daily or twice daily complete water changes) until the main tank is through cycling. He is small enough that living in the 10 gallon for another week won't be a big deal. Can I put him in the bin (after a 100% water change) and use him to finish off the cycle, or is that a bad idea?
