Because you are doing a fishy cycle, you need to do daily water changes of 50%. Do a search for "fishy cycle". Theres a ton of info. Also go and get your own test kit. Your LFS saying "fine" really doest tell you much.

Yeah, 25% a month is a little low (I think) even on a cycled tank. I usually do about 10-20% a week, and some will even say THAT is not enough!!! If you have your LFS test the water, just make sure you ask for actual numbers and write them down so you can look into what they mean and/or post them here. Most LFS workers don't really care about the quality of your water, and some might not even know enough to tell you otherwise. In general nitrite/amonia should always be 0.

If you really want to know the pH more specifically, try a High Range pH test. I use the liquid test kit from Aquarium Pharmaceuticals. It has two pH tests: one for 6.0 - 7.6, and one for 7.4 - 8.8. They are very simple to use. I'm sure there are other companies that make pH tests for higher ranges, as well, but I know of this one which works just fine. You can buy them as part of a master set which has many different tests, or you can buy the pH tests separately. Not very expensive either. Good Luck!
