With all the problems people have trying to keep plants happy i'm thinking of starting out with plastic plants and maybe gradually experiment with a few of the more hardier plants as time goes on, what are some of the plants recommended for people who have no luck with real plants.

Planted tanks and plants do better if you stock them heavy from the start. Normally lightly planted tanks can have more issues then heavily.

java fern, crypts, anubias, mosses, red tiger lillies, banana plants, and swords are all a good start
just do all plants if you are going to do any at all, and do your research before hand. Add as many plants as you can initially, and just add more and more when you want to (just be sure to properly acclimate/clean them though, I got an ick outbreak from plants I didn't clean once)

Dwarf sag and hornwort have grown extremely quickly for me (give sag a good substrate and it goes crazy) even better than floaters like dwf and frogbit that lots of people seem to have taking over their tanks. Like others before me have said, java fern, anubias, mosses, and crypts work well. Expect a crypt melt though.
People have problems with planted tanks for the same reason they have problems with learning how to care for fish. They are living organisms with specific needs in order to survive, reproduce and flourish.
Just like fish you need to learn what to feed them, the environment to keep them in, the proper stocking level, and the specific requirements for individual species.
Just like no one is a fish expert on day one, no one is a plant expert because they bought some plants at the pet store.
All of the plants recommended will suffer and die if the conditions are not at least reasonable. They just tend to be able to survive a broader amount of punishment.

Anacharis is the most beginner plant in my opinion. It can float, be planted, and it grows easy and alot. It's very hardy and can grow in all freshwater tanks with a light and fish.

It's also the one that gives more people issues trying to grow it out of any if the easy stuff there is.
I've got tons of difficult plants that grow great. But can't make anacharis stop melting in several of my tanks.
