I found that plants that aren't potted(plants that are tied together) fall apart not long after you get them. I have not done well with those kinds of plants. Why is this?

They are bunch plants. They don't have roots yet. Most bunch plants have been snipped off the tops of a mother plant. Some species just never grow true roots that anchor them into the substrate. Thats why its important to have a substrate that will hold bunch plants until they establish themselves or, weigh them down.
Go to your lfs and ask for plant plugs. The certainly help in establishing bunch plants.
