If there is an ammonia spike, I'd start doing daily water changes until everything clams down. Someone correct me if I'm wrong, but so long as you get the temperature of water within a degree or two of the water in the tank, and there are no large differences between the ph and hardness of the new water and the tank water, you can get away with changing about 50% of the water each day without causing too much stress. This will help dilute the ammonia faster, and make things healthier for your fish sooner.
